Why is there a white or colored edge left around my subject?

That halo is anti-aliasing: the pixels along the border are a blend of the subject and the old background color, so they sit just outside the tolerance cutoff and survive. Nudging the tolerance up can trim it, but on a low-contrast boundary - light hair against a light background - no single setting removes the fringe cleanly without eating into the subject.
